Mexican Kitchen

We loooovvvve Mexican food!!  We have a few favorite spots we like to hit for some yummy tacos, guacamole, burritos, and margaritas, but sometimes I make HEALTHY TACOS at home.  Oh, yes, there is a healthier version for just about anything.  I think I change something in just about every recipe I use if it is not already created as a healthy recipe.  So, for tacos I always buy the leanest ground beef (or, sometimes I make chicken tacos).  Ok, ok, I will admit that I have been known to cook it a little too long…almost causing John to choke…so, I finally got brave and decided that yes, the meat is done so it's not really necessary to make "hamburger popcorn" out of it.  Who ever heard of such??…well, when it's that "done" it's kinda like popcorn!!  Ok, moving on…I don't do that any more.  Now, you're feeling sorry for John having to eat what I cook.  I really am a good cook!  Well, when I want to be.  Back to my tacos…there is this awesome homemade salsa at our grocery store that I love to pick up when I know I will be making tacos.  And, I really like to brown the hamburger meat and add in this yummy salsa.  Oh, it is soooo good!!  And, John likes it, too…well, he says he does!  So, I add that in with the hamburger meat, and then top it with a little more salsa, low fat cheese, a mixture of salad greens, and fresh tomatoes.  And, we do love those taco shells that stand up on their own…"stand and stuff"!!  Now, why didn't they come up with those years ago?!

And, I do love fresh guacamole!  However, this night I just didn't have time to make some because we were starving.  So, I really like slices of avocado and thought I would add a few to our plates (BTW…I did NOT eat 4 tacos!!…I know you were wondering!).  As we were eating, John looks at me and says, "You know, you can stop putting these avocado slices on my plate when you make tacos.  I really don't care for just the plain avocado.".  So, I looked at him and simply replied…"Well, avocado is good for your HEART."…which was my way of saying…"Eat it anyway!".  You think I will use this with kids one day??  Probably!!

And, I know you're wondering if he ate those pretty slices of avocado…nope…sure didn't!  Well, guess I learned my lesson!  But, guess what…there's more than one way to look after his heart!!  You guessed it…next time I'll be making guacamole!! teeheehee
