If you follow my shoppe page on Facebook (Thank you!! ~ and, if you don’t I would love for you to!), then, you probably saw where I mentioned that I would be sharing a yummy {EASY} recipe with you. Well, here it is. This recipe is actually from Taste of Home, and my mom shared it with me. However, before sharing it she made it and added a couple of extra ingredients that make it so good. I haven’t ever been such a big fan of meatloaf, but I really like this. I have an electric skillet {thank you, momma for recommending it and suggesting I get one!} that I love to cook dinner in. It’s so easy to toss in chicken, veggies, or whatever you’ve got on hand, and before you know it, you’ve got a great meal. Believe me, that skillet has probably won me more “wife points” than the oven ever has! 🙂
I haven’t made this yet, but I did get to enjoy it while we were at my mom’s recently. It was SO GOOD! I also want to try making it with ground turkey. I don’t eat much red meat; it doesn’t seem to make my stomach very happy any time I do so I’m looking forward to trying it with the turkey in place of the beef. And, whether you choose to cook it in an electric skillet or the over, well, you will love that everything goes in and cooks together ~ leaving you plenty of time to get a few other jobs done! But, do set the timer…if you’re like me, you’ll forget you’ve put dinner on and end up with the crispy version! Oh, yeah, I’m so bad about this! This chick gets busy painting, working on jewels, answering to Sir Tucker, and before you know it I’m having to say “Ah, John, look at this and let me know if you’ll still eat it.”!! LOL
Hope you have fun trying this recipe, and please let me know how it turns out for you. *Oh, it works out just fine to use canned veggies, too, if you don’t have fresh or frozen.

It looks really simple to do. My kids love Meatloaf. I usually just buy from costco. I will try someday and let you know. I’ve never cooked with and electric skillet. Something I didn’t know I needed. Thx for the recipe.

Yes, let me know what you think when you try it. It is really good! And, yes, girl, you do need that electric skillet!! LOL My mom had been suggesting I get one for a long time and kept telling me it would be something that would help me out dinner plans when I was busy working on orders and such. She was right! Got mine at Bed, Bath, & Beyond! 🙂

Hello Ann-Margaret! Thanks for sharing the recipe. I love Taste of Home magazine, so I’m sure it’s great. My husband loves his electric skillet – makes pancakes and chicken in it all the time. There are some spots that are more hot than others though…eventually we have to replace it and buy a new one.
Hi Cindy!! I did actually end up making the recipe with the ground turkey so I need to share that on the blog soon. It was good, too! Ooh, I know…Taste of Home is full of so many yummy recipes! 🙂 I haven’t tried making pancakes in the skillet so I’ll have to do that…we enjoy having “breakfast” for dinner sometimes! You are so right though about some spots getting hotter than others, as I’ve found that with mine, too. I do love how fast it cooks and how I can leave it while I’m busy working on things…good for us girls that are always needing a few extra hands! Know you can relate! 🙂
